OMGosh… soooo delic! The 8 oz is a measurement of weight, so you should be good either way! I make it easy on myself and buy the 8 ounce blocks of cheddar from the store. The spice level is more of a mild but slower burn than with black pepper.

However, if you can substitute a pinch less of black pepper if you must and it will still be wonderful! They should stay the same, but you might want to shave a minute or two off of the noodle boiling time.
